Notice that I have replace the cooling rack with the inverted gas grill.  This gives
just a bit better air flow and eliminates all smoke.  The TLUD system is quite
sensitive to the amount of 'gap' between the top of the Drip Pan and the bottom of the pot.

This configuration is remarkably stable.
